1 cup walnuts, unsalted
¼ cup coconut flour
8 Tbsp butter
½ cup erythritol
1 tsp ground nutmeg
1 tsp vanilla extract
Preheat the oven to 325 and line two baking sheets with parchment paper.
Place walnuts in a food processor and pulse until ground. Add the coconut flour, erythritol, nutmeg and vanilla and process until fully combined.
Cut the butter into small chunks and add to processor. Pulse until soft dough forms.
Using tablespoon, form balls from dough and place onto parchment paper. Flatten with hand or bottom of clean glass.
Bake for 13 minutes. Sprinkle with nutmeg upon removing from oven. Allow to cool for 20 minutes before removing from baking sheet.
