Super Green Sausage Balls
Ingredients
1 pound of spicy sausage
4-ounce pepper jack cheese, shredded (or your cheese of choice)
11-ounce package of super green mix (kale, spinach, swiss chard)
1 egg
1 tsp salt
½ tsp onion powder
½ tsp garlic powder
½ black pepper

Instructions
Preheat oven to 350 degrees F
Using food processor, process package of mixed greens (in 2 batches)
In large bowl mix all ingredients by hand (yes- this is messy)
Roll mixture into 1-inch balls and place on parchment paper lined baking sheet
Bake for 20-22 minutes- be careful to not overcook
Can be served immediately and/or stored in refrigerator for five days.
These reheat in the microwave beautifully.
