Spaghetti Squash Latkes


1 spaghetti squash

1 T Olive oil, butter or ghee


2 eggs

2 T Olive oil, butter or ghee (for frying)

1/4 tsp garlic powder

1/4 tsp onion powder

salt/pepper to taste


Roast Spaghetti Squash

Cut squash in half (longways)

Remove seeds with spoon

Drizzle with olive oil, butter or ghee

Sprinkle with salt/pepper

Roast on baking sheet with parchment paper

350° for 45 minutes or until soft.

Let cool

Use fork and remove squash from skin.

In a bowl mix squash with 2 eggs, garlic powder, onion powder, salt/pepper.

In a frying pan, fry in olive oil, butter, or ghee on both sides until crisp.
