Lemon Chicken


6 chicken thighs

1 tablespoon fresh rosemary, chopped

2 garlic cloves

1 shallot, chopped

1 lemon, juice and zest

½ cup olive oil


Mix together rosemary, garlic, shallot, lemon juice and zest, olive oil.

Pour over chicken and marinate in refrigerator for at least 2 hours.

Pre heat oven to 350 degrees

Bake chicken in roasting pan for 25 minutes or until cooked through.

Serve with roasted vegetables or a simple salad.
