Instant Pot Pork Ribs

Dry Rub

• 1.5 Tbs sea salt

• 1 Tbs monk fruit or erythritol

• ½ tsp black pepper

• 1 tsp garlic powder

• 1 tsp onion powder

• 1 tsp paprika

• ½ tsp allspice

• ½ tsp ground allspice


• ½ cup no added sugar ketchup

• 2 Tbsp monk fruit or erythritol

• 2 Tbsp apple cider vinegar

• ½ cup water

• 1 tsp liquid smoke

• ½ Tbsp ground mustard

• ½ Tbsp ground allspice

• ½ tsp onion powder

• ¼ tsp xanthan gum (optional)


1. Mix all ingredients of dry rub and season all sides of ribs with dry rub.

2. Stack the ribs in Instant Pot or slow cooker.

3. Combine ketchup, sweetener, vinegar, water, liquid smoke, mustard, allspice and onion powder.

4. Pour the sauce over ribs in pot.

5. Seal Instant Pot and use manual setting to set the time to 35 minutes on high pressure or if using slow cooker, cook on low setting for 6-8 hours.

6. When timer is finished, quick release pressure.

7. Remove ribs from pot and place on platter.

8. Whisk the xanthan gum into the remaining liquid in pot, then use the sauté function to cook the remaining liquid in the pot for 10 minutes.

Pour sauce over ribs and serve.
