Serves 6 | Prep/Cook time 20 minutes


Cauliflower rice- 6 cups

("rice"cauliflower with a food processor,

cheese grater, or buy frozen already "riced')

Onion- 1 cup, chopped

Garlic- 3 cloves, minced

Avocado- 2 large, diced

Cilantro- ½ cup

Lime juice- 2 ½ Tablespoons

Ghee/butter- 1 Tablespoons

Jalapeno- 1 or 2, diced

Salt/Pepper to taste


 Sauté onions in butter or ghee until translucent, add garlic and cook for additional minute.  Add cauliflower rice and cook for 6-7 minutes or until desired softness.

Prepare avocado mash.  Combine avocados, jalapeno, lime juice and salt/pepper.  Mash with fork until combined.

Add avocado mash to cauliflower and top with cilantro and add additional jalapenos if desired.
